This is a wonderful, quick and easy dish to enjoy all year round, but especially during winter and in the transition between seasons.
It is cleansing and nourishing and supports a light detox while still being deeply nutritive. This dish encourages regular elimination and clarity of mind, reduces heaviness, improves metabolism, and supports Agni, our digestive fire.
Quinoa is a light, and a protein rich alternative to grains, which for many people is much easier to digest. It’s high protein content makes it rejuvenating and tissue-building.
Cumin is deeply digestive. It stimulates Agni, digestive fire, without being too heating, reduces Ama, accumulated toxins in the body, and gas. Cumin also balances Vata and Kapha, and is mildly Pitta friendly when used moderately.
Pepitas are nutritive and strengthening, high in zinc, iron, and protein – supporting and building Ojas (vital essence) and building muscle and tissue (mamsa dhatu).

Cumin Quinoa Veggies
Serves 2
Ingredients
1 tablespoon ghee (or butter)
1 teaspoon cumin seeds
1 teaspoon cumin powder
10 beans chopped
Half a carrot diced
2 medium potatoes diced
2 florets cauliflower chopped
2 florets broccoli chopped
1/2 zucchini diced
1/2 medium brown onion diced
1 clove garlic finely chopped
1/3 cup white quinoa
1/3 cup pepitas
1/2 cup water
1/3 cup coriander
1-2 lemon or orange wedges
Method
1. Place quinoa in a saucepan full of boiling water. Cook for 10-15mins, until quinoa is light and fluffy.
2. Melt ghee in a medium saucepan on a medium heat.
3. Add cumin seeds. Once the cumin seeds start to pop, add cumin powder.
4. Add garlic and onion.
5. Add all vegetables, cook for a few minutes. Add pepitas, basil and water and allow to slimmer on a low heat. Cook for 20-30mins or until soft.
6. Strain quinoa, rinse and stir through vegetable mix.
7. Serve with chopped coriander and a squeeze of lemon or organise juice.
